This slightly sweet bread is perfect for breakfast & loaded with healthy, good-for-you ingredients like pumpkin, zucchini, carrots, coconut, nuts, and seeds and dried fruits. I LOVE this warmed up slightly with my morning cup of coffee or tea ❤
“Gut health” is a phrase that is becoming recognized and seen more and more frequently when we are talking about overall health.
Well, it is pretty simple: Research over the past couple decades has revealed that gut health is critical to overall health. Not only that, the research further shows that an unhealthy gut actually contributes to a wide range of diseases such as diabetes, obesity, autism spectrum disorder, rheumatoid arthritis, depression and chronic fatigue syndrome.
In fact, there are many researchers who believe that supporting intestinal health and restoring the integrity of the gut barrier will be one of the most important goals of medicine in the next century. Continue reading “Probiotics & Gut Health”→
These burgers are my easy to put together and SUPER flavorful! They have over 15g of protein thanks to a boost coming from the amazing iWon! Organics protein chips…in this case, the ranch flavor 😀
These are super flavorful and also vegan! Though, there will be one ingredient you can choose to use that would made them simply vegetarian 😉
My secret ingredient is really the iWon protein chips…just like my last veggie burger recipe, I crush them up instead of using standard bread crumbs and they add flavor, protein, and are an EXCELLENT binder for the burgers! Continue reading “Ranch Veggie Burgers”→
Spicy or not spicy…all up to you!
& Super healthy ❤
My secret ingredient for making these taste like a delicious green chili enchilada: Crushed up tortilla chips instead of the standard bread crumbs used in so many veggie burger recipes!! I’m telling you…game changer!! Continue reading “Green Chili Veggie Burgers”→
This is also highly customizable because you can add whatever veggies you like and you can also add tofu (which I did), or tempeh, or vegan chicken (or regular chicken for you meat eaters 😉 ) And toppings…go crazy! Try things like scallions or chives, cilantro, parsley, sesame seeds, hemp seeds, chia seeds, chopped peanuts, hot sauce, etc., etc. Continue reading “Chilled Spicy Peanut Noodle Bowl”→
This is the first East Indian style curry dish I have ever made that I am 100% happy with! Whenever I have tried in the past I always feel like it is missing something…well NOT THIS TIME 🙂 This is a fast, simple, and delicious recipe and it gets even better as the leftovers sit in your fridge. Try it and I know you will love it ❤
And while I used specific ingredients in the making of this recipe, feel free to toss in other vegetables you may have in your fridge or garden (i.e. zucchini, eggplant, bell peppers, etc.) because I have no doubt that they will end up tasting just as delicious as what I used 😀
The debate between vegans and plant-based dieters has been going on for a long time. So I wanted to break down the differences; they are not the same, and it can get confusing if you aren’t fully informed. You might think you are vegan…but are you really??Continue reading “PLANT-BASED VS. VEGAN”→
I am so happy (and a little impressed) with these “cheatos”:-) They are suuuper low carb and totally satisfy my desire for a crunchy snack! They are great for dipping, too! Try softened vegetable flavor cream cheese, hummus(watch the carbs!), sour cream, cheese sauce, etc. AND they go amazingly along side chicken or tuna salad. Lastly, you can use them as a fun salad topper…almost like a crouton!
The macros for the WHOLE recipe are 31F/2netC/36P ❤
This is the EASIEST soup you will ever make! And it is perfect for adding things to. This time, I added chopped up chicken breast but feel free to throw in other veggies, cooked pasta, spinach (I know, I just said veggies), beans, other cooked meats & sausages, cheese…the list goes on and on.
It is simple, fast and healthy which are all things I love in a soup! It also makes 6 servings, so when I make it, Daniel and I can enjoy it throughout the week.
And don’t be scared to toss on the toppings! Vegan sour cream, cilantro, salsa, etc., etc., etc.
Do you all remember that crazy “Cabbage Soup Diet” that was all the rage 10-15+ years ago? I sure do! My dad tried it a few times and even after the fad was over one thing remained…THE SOUP!! I always absolutely loved the soup!! 😀
I know it might sound crazy, especially if you are familiar with how strange the diet was, but I swear up, down, and sideways that the soup is amazing! And it the ingredients are veggies, veggies, and more veggies. It is like eating a salad…but hot…or cold, actually, because I love it both ways!
It may not be the most beautiful dish you’ve ever laid eyes on but just trust me…You want this in your life.
