Coconut Lemon Cheesecake Fat Bombs

My Oregon Kitchen

IMG_20160401_101545

The name of these little delicious morsels may be a mouthful to say, but I promise – these are some of the easiest and most flavorful fat bombs you can make!

UntitledThey really do taste like lemon cheesecake and, surprisingly, are not overwhelmingly coconut-y. They are just so good! And they take about 5 minutes to make, if that!

I just know that I almost always have these on hand because sometimes something with a little fresh “zing” is just plain ol’ refreshing ❤ Thank you, lemon, for that!

Coconut Almond Zucchini Cake (Paleo & Keto)

20180906_105043_0001.png

I was craving a little something sweet last night and at first I was going to make some paleo/keto zucchini brownies but then I saw the almond extract in my spice cupboard and thought “ooooooh” and that was that. Inspiration struck. Enter this beautiful, delicious, guilty-tasting (but not!) baked good. Is it a breakfast item? Dessert? Snack? I think it is all of these things. I’m currently eating a piece with my morning coffee but I think it would be SO GOOD with some coconut whipped cream (or regular whipped cream) or some Enlightened ice cream ❤ Continue reading “Coconut Almond Zucchini Cake (Paleo & Keto)”

PERFECT Paleo/Keto Sandwich Bread

I am all for living a life filled with more whole-foods, following a paleo-ish diet, low in carbs and high in fats but I need things. Like bread. Okay? Judge me if you want to…but I cannot and REFUSE to live a life without bread.

I am beyond excited to share this recipe for this Paleo and Keto Sandwich Bread because, even though it’s completely grain and gluten free, it tastes SO GOOD and the consistency is both moist and soft just like the “regular” sandwich bread we used to eat. Nutrient Bioavailability: A Brief Into

mealplanphoto

Here’s a quick pop quiz:

1. Is spinach a good source of iron and calcium?

2. Can you boost the amount of iron you absorb from your food by consuming vitamin C?

3. Is it better to take vitamin/mineral pills with meals?

The answer to all of these questions is “yes, but”—with the emphasis on the “but”… Continue reading “Nutrient Bioavailability: A Brief Into”

Probiotics & Gut Health

“All disease begins in the gut.” – Hippocrates

“Gut health” is a phrase that is becoming recognized and seen more and more frequently when we are talking about overall health.

Why?

Well, it is pretty simple: Research over the past couple decades has revealed that gut health is critical to overall health. Not only that, the research further shows that an unhealthy gut actually contributes to a wide range of diseases such as diabetes, obesity, autism spectrum disorder, rheumatoid arthritis, depression and chronic fatigue syndrome.

In fact, there are many researchers who believe that supporting intestinal health and restoring the integrity of the gut barrier will be one of the most important goals of medicine in the next century. Continue reading “Probiotics & Gut Health”

Sometimes you just need something chocolate-y, am I right?

Well, the other night I was in that state of mind but the only thing chocolate in my whole house was unsweetened cocoa powder…I was determined and came up with these super fast & simple brownies that you can make using ingredients you most likely have in your house at all times!

I made a half batch (pictured) but the full recipe will fill a 8×8 or 9×9 pan 🙂 Continue reading “Fast & Simple Brownies”

Ranch Veggie Burgers

1

These burgers are my easy to put together and SUPER flavorful! They have over 15g of protein thanks to a boost coming from the amazing iWon! Organics protein chips…in this case, the ranch flavor 😀

These are super flavorful and also vegan! Though, there will be one ingredient you can choose to use that would made them simply vegetarian 😉

My secret ingredient is really the iWon protein chips…just like my last veggie burger recipe, I crush them up instead of using standard bread crumbs and they add flavor, protein, and are an EXCELLENT binder for the burgers! Continue reading “Ranch Veggie Burgers”

Green Chili Veggie Burgers

These burgers are my new favorite! They are:

Simple
Flavorful
Savory
Enchilada-inspired
Spicy or not spicy…all up to you!
Vegan
& Super healthy ❤

My secret ingredient for making these taste like a delicious green chili enchilada: Crushed up tortilla chips instead of the standard bread crumbs used in so many veggie burger recipes!! I’m telling you…game changer!! Continue reading “Green Chili Veggie Burgers”

Nacho “Cheesy” Bean Dip

cheese

This takes just 10-15 minutes to throw together and it is the perfect dip for chips, crackers, or veggies, and is also amazing in tacos, burritos, sandwiches and even on nachos!! Basically, it is good in or on anything!! 😀

This is packed full of healthy ingredients, super low fat, AND has no added oil so you can feel good about devouring it all right after you make it! …seriously though, I’ve done it…

Lastly, it is super easy to double or triple this recipe, which you will probably do in the future because you are going to want this stuff on EVERYTHING!! Continue reading “Nacho “Cheesy” Bean Dip”
