Sometimes you just need something chocolate-y, am I right?
Well, the other night I was in that state of mind but the only thing chocolate in my whole house was unsweetened cocoa powder…I was determined and came up with these super fast & simple brownies that you can make using ingredients you most likely have in your house at all times!
I made a half batch (pictured) but the full recipe will fill a 8×8 or 9×9 pan 🙂
•1/3 Cup melted coconut oil (or veg. oil)
•1 cup sugar
•1 tsp vanilla
•1/2 cup flour (can sub out some flour for protein powder, if desired, but not all or they consistency will be off)
•1/4 cup + 2T cocoa powder
•1/4 tsp baking powder
•1/4 tsp salt
• Any nuts and/or chocolate chips if you want
Preheat oven to 350°
Mix oil, sugar, egg, & vanilla.
Mix dry ingredients separately then add to wet ingredients & mix until just combined.
Pour into greased & floured pan (PRO TIP: use cocoa powder instead of flour to flour your pan 😉 )
Bake for 20-25 minutes, until toothpick comes out clean.
