Vegan Parmesan Cheese


One of the things I miss most since cutting out (moooost of the time) dairy is CHEESE!!! I absolutely love cheese. All cheese, any cheese. White cheese, blue cheese, hard cheese, soft cheese!!!

Ok. Cheese-love rant over. 🙂

I would have NEVER thought just 4 simple ingredients together would yield something that tastes JUST LIKE one of my much-lobed cheeses: Parmesan. And it takes just about 1 full minute to make and will keep in the fridge for a 2-3 weeks, easily!!


  • 1 cup almonds (I like the slivered skinless type)
  • 2T nutritional yeast
  • 1tsp garlic powder
  • 1/2tsp sea salt

Place everything into a food processor or high-powered blender (I use a Nutribullet) and pulse until you get your desired consistency. Add more garlic powder and/or salt if desired. You’ll figure out what proportions yield the flavor you like best! **don’t pluse toooo much as the almonds might start to turn into a paste**


Sprinkle on any and everything!!! YUM!!

Store in an airtight container in your refrigerator for 2-3 weeks 🙂
